LAKSA NOODLE SOUP

When I first tasted the authentic Laksa Noodle soup, I was really perspiring all over but I cannot stop slurping the noodles and the soup. It is so spicy and yet leaves a soothing effect in your throat that you never wanted to leave your bowl any trace. Every single spoonful of soup was really marvelous. Its creamy, spicy and soothing. Even now that I am just describing the experience and taste of Laksa, I feel like it still linger in my mouth. Not to mention the rich and flavorful ingredients like the fresh prawns, the chicken strips and the combination of all the vegetables plus herbs are perfectly compromising each other. You don't have the feeling of overpowering of flavors and spices but actually it blends together very well. And when I tried to make my very first Laksa noodles soup, I made sure I'll have the same experience. Well, if you will ask me, the very first attempt to clone it never failed me...and will sure do to all my next try. This noodle soup is perfect this rainy season. But if you will again ask me, I will still have this noodles soup even in the midst of summer heat. Now check out the ingredients and you may also want to try this at home!

Laksa Noodle Soup
INGREDIENTS:
500 grams fresh noodles from LINGNAM (or Sapporo, please refer to package instruction)
200 grams chicken liver and gizzard
200 grams chicken breast ( cut into strips)
250 grams medium to large prawns
250 grams pork balls
Bokchoy leaves
Green Onion
Chilies
6 Cloves of garlic
1 medium size onion minced
2 tbsp minced ginger
Coconut Cream
Meat stock
All purpose cream
Chili powder
Chilli flakes
Chilies
Shrimp paste
Kaffir Lime Leaf
Lemon Grass
Salt and pepper to taste
Olive oil 


PROCEDURE:
  1. In a pan, saute garlic, onion and ginger then add the liver and gizzard.
  2. Add some meat broth and allow to simmer until the meat is tender.
  3. Once it is cooked and tender add, the chicken strips, prawns and the pork balls then season with salt and pepper. 
  4. Set it aside.
  5. Meanwhile, prepare the noodles by giving it a quick and hot shower and drain it right away. Keep it in the colander and set aside while you cook your soup.
  6. To prepare the Laksa soup, you need to put the ingredients 6 cloves of garlic,1 medium size onion minced,2 tbsp minced ginger, chili powder, chilli flakes, shrimp paste, kaffir lime leaf, lemon grass, salt and pepper to taste in a food processor and pouring some meat stock until it become paste.
  7. Once the mixture become paste, heat a pan and pour over some oil and put the mixture for about 2-3 minutes until its aroma is extracted.
  8. Continue to stir for another 3 minutes.
  9. Then pour in the meat stock, the coconut cream and all purpose cream.
  10. Check the level of heat (referring to the chilies), you may add some more fresh depending on your preference.
  11. Bring to a boil and its done.
  12. Prepare to decorate it in a bowl by adding some bokchoy and green onions.

HAWKER STYLE NOODLE

Now it's my turn to boast my version of the Singapore Hawker Style noodle. Call me a copycat but I always make sure I do better than those that I copied. Anyway, I try to make my own version of this noodle dish so I can share it to you. I choose and substitute ingredients from the original to what is available in our local market, this is one of my major objective here, let's all try to be resourceful and come up with the perfect dish that you and your family will surely enjoy!





 INGREDIENTS:

500 grams fresh noodles from LINGNAM only (or Sapporo brand- check the cooking instruction)
300 grams Shabu Shabu Mixed seafoods (you can buy anywhere like SM Supermarket)
1/4 cup black fungus
1 cup any meat available in your fridge (chicken, pork or seafoods) flakes
1 medium size onions
3 cloves of garlic minced
2 liters of meat broth
salt and pepper to taste
Cilantro, parsley or any leaves available for garnishing









PROCEDURE:

  1. Saute garlic, onion and the meat flakes until cooked. Season with salt and pepper.
  2. Once cooked, put in all the mixed seafood and vegetables for about 2-3 minutes or until its cook..
  3. Strain the sauted ingredient and set aside.
  4. On the same pan that you used, place the water and season with salt and pepper. 
  5. Bring to a boil.
  6. Prepare the noodles by giving it a quick hot shower in boiling water and drain.
  7. Prepare the bowl of noodles and garnish.
  8. Now it is ready to serve.
